Lamb Lollipops with bone broth quinoa
ingredients for lamb:
Rack of Lamb (we buy ours from Costco)
Tallow, Ghee, or Avocado Oil
Salt
Pepper
Ingredients for the Bone Broth Quinoa:
Quinoa
Shallot
Garlic
Mushroom
Eggplant (optional)
Salt
Pepper
Paprika
Italian Seasoning
Bone Broth
STEPS FOR THE BONE BROTH QUINOA:
Saute shallot and garlic in olive oil or butter
Add mushrooms and eggplant, as well as salt, pepper, paprika, and italian seasoning
Once mushrooms have thrown liquid, add bone broth and quinoa
Bring to a boil, then drop to simmer, cover, and stir occasionally
STEPS FOR THE LAMB LOLLIPOP:
Cut apart your rack of lamb into individual pieces
Season - we use salt and pepper but there are many delicious rubs and blends
When skillet is heated, add some high smoke point cooking fat (we use tallow or ghee, but avocado oil also works) - we don’t use too much oil since the lamb has its own fat
Cook your lamb!
