Fish Tacos with Crunchy Rice
Ingredients for the sauce:
Mayo
Ketchup
Dijon Mustard
Onion Powder, Garlic Powder, Black Pepper
Sweet Relish
Ingredients for the Fish Tacos:
Wild Caught Alaskan Cod (these are also great with wild shrimp or even chicken)
Tortillas (we buy the Rise & Puff Gourmet Tortillas with just 4 ingredients)
Cherry Tomatoes
Cheddar Cheese
Chili Powder Blend
We use The Spice Hunter’s blend (chile pepper, onion, garlic, cocoa powder, oregano, red pepper, cumin, cinnamon, cloves)
Ingredients for the Crunchy Rice:
Day old rice
Onion Powder, Garlic Powder, Ginger Powder
Coconut Aminos
STEPS FOR THE SAUCE:
Add mayo, ketchup, dijon mustard, sweet relish, onion powder, garlic powder, and black pepper to a bowl and mix
STEPS FOR THE CRUNCHY RICE:
*This takes the longest time to prepare
Heat up a stainless steel pan and add some avocado oil
Once oil is hot, add day old rice, flattening it out so it covers the whole surface of the pan
Let the rice cook and start to get crispy without mixing it but don’t let it burn
Mix the rice then flatten it out again and let it continue to get crunchy (you can add more avocado oil if needed)
Add seasoning (onion, garlic, and ginger powder), mix, then spread the rice
Add coconut aminos along the rim of the pan, mix, spread the rice, continue to let it get crunchy
Make sure you’re watching the rice because the coconut aminos can burn at this stage, so you’ll want to mix the rice more often now while still letting it get crunchy

Prepare your fish & season it
Bake your fish
Heat up your tacos
Assemble your tacos - we go tortilla, fish, sauce, tomatoes, then cheddar cheese on top
