Coconut amino teriyaki chicken
Ingredients for Coconut Amino Teriyaki Chicken Marinade:
Coconut Aminos
Ponzu Sauce (optional but we like the kick it brings)
Onion Powder
Garlic Powder
Ginger Powder
Ingredients for Coconut Amino Teriyaki Chicken:
Sweet Onion
Broccoli
Bell Pepper
Chicken (Breast or Thigh)
Rice or Rice Noodles
Sesame Seeds (optional for garnish)
Green Onion (optional for garnish)
Cashews or Peanuts (optional for garnish)
STEPS:
Prepare your marinade & put your chicken in it (length of marination depends on how strong you want it)
Cook your chicken (you can cook it however you want, but we opt for cast iron so we can pour all the marinade in there, and let it cook with the chicken)
Caramelize your onions and cook your vegetables (you can do this after your chicken is cooked or if you’re like us and like to cook things separately, do so)
Add to a bowl your rice or rice noodles, caramelized onions, cooked chicken, and add toppings for garnish if you want
If you want extra sauce, you can add more coconut aminos or prepare extra marinade that you keep off to the side at the start
* If you make extra marinade, make sure you keep it separate, and you don’t put your chicken in there. We don’t want to pour extra marinade over our cook that had raw chicken bathing in there
